A polished wine bar with refined service, grown-up drink choices and an address in the CBD’s most historic buildings? This is a Petition wine enthusiasts will want to sign.

Petition Wine Merchant Cellar and Bar
Why you goIn a town where loud and loose is all the rage in wine circles, this polished bar and bottle shop goes the other way and offers guests refined service, grown-up drinking and a smart CBD setting. Then again, considering Petition is part of Perth’s mighty State Buildings, a trio of the city’s most historic buildings reborn as an urbane food-and-drink precinct, it’s no surprise that staff sweat the details – none more so than State Buildings director of wine, Emma Farrelly. We have her to thank for Petition’s electrifying line-up of Australian and international wines with a strong focus on producers working organically.
Why you stayAlthough Petition eschews the frat-party vibe of many of its peers, its atmosphere is far from drab. Drinkers gathered at the bar and around tables in the adjacent Postal Hall are clearly having a good time – they’re just more likely to be suited and booted than wearing overshirts and loose-fit trousers (or at least during the week when the after-work crowds congregate here to decompress or buy something to go with dinner that night). The glassware sparkles, the soundtrack is conversation-friendly and warm staff are both well-dressed and well-drilled on what’s on the shelves and in the fridges.

What drink to orderWhat’s hot right now amongst wine aficionados? Look no further than Petition’s by-the-glass picks, an engaging snapshot of what’s trending (it’s official: orange wine and chilled reds are no flash-in-the-pan and here to stay) as well as emerging winemakers to watch (In Praise of Shadows from McLaren Vale, for instance). Otherwise, every bottle in stock is, with an additional corkage fee, available for drink-here enjoyment. For those seeking respite from the grape juice, high-end spirits plus a handful of cocktails and beers round things off (although beer nerds are advised to head straight to sister venue Petition Beer Corner).
What to pair it withThe final member of the Petition family is Petition Kitchen, an all-day, Cumulus Inc-inspired eatery that also services the wine bar. Dining solo and feel like upgrading that glass of juicy red to a meal deal? A comforting wagyu cheeseburger saves the day. Need something to go with that crisp, dry French picpoul the sommelier put you onto? From a geographical and flavour standpoint, chicken terrine is a perfect fit. Petition Kitchen’s beloved shaved broccoli, mixed grain and sheep’s feta salad fits the brief for clean eating, while the fries (made from either potato or polenta) go great with pretty much anything.

Don’t leave withoutThe beauty – and perhaps danger – of Petition’s bar-and-shop model is that you can discover a new favourite and then buy bottles of it to bring home with you right away: try-before-you-buy is rarely this enjoyable. Decanters, glasses and other wine-drinking paraphernalia also form part of the retail offering, as do olive oil, preserves and honey from affiliate farm and restaurant Coogee Common.
Make it fancyThe premium by-the-glass options show off the cellar’s global scope, from world-class French chardonnay to benchmark Barbera d’Asti, one of the best-known red wines from Italy’s Piedmont region. The cheese and premium pairings also highlight international talent, only this time each import gets paired with a matching Western Australian cheese. Otherwise, the store’s Champagne and cult-wine stocks (all conveniently gathered in the one place) offer options aplenty for splurging. The ultimate flex, however, might well be splashing out on a room at Como The Treasury, the State Buildings’ marquee tenant and one of Australia’s finest luxury hotels.
Who to takePetition might be polished, but it isn’t posh and the bar’s approachability is a key part of its appeal. The setting is smart enough that you could have a glass here with the boss on Wednesday, but you’d also return on the weekend with friends, confident that you’d have a blast. For anyone who considers themselves a wine enthusiast, this is one Petition worth signing.
