What’s not to like about the humble chicken parma? Crispy-fried crumbed chicken covered in a rich tomato sauce, layered with ham and oozy melted cheese is a hot favourite for very good reason. It’s one of those can’t-take-off-the-menu items, whether that’s the textbook pub serving where the chicken’s so big it hangs off the plate, a more elevated twist featuring prosciutto and fancy cheese, or a more authentic Italian eggplant version. If you’re unable to go past a parma, we’ve pulled together some of the best ones around the country. Here’s where to find the best chicken parmas in Australia.
Inside the Bat & Ball Hotel in Sydney
The best chicken parma in SydneyWith awards like ‘Best pub food’ and ‘Pub of the year’, Dove and Olive in Surry Hills sure lives up to the hype. It’s 300g of juicy chicken, topped with smoked ham and a three-cheese mix served with slaw and fries. It pairs well with Tuesday or Wednesday trivia. The Glenmore at the Rocks serves the classic with buffalo mozzarella and a side of Sydney Harbour views. In Redfern, you’ll find the Bat and Ball Hotel (pictured), which is the perfect stop on your way to or from the SGC and the parma is elite. It’s served with fries and leaves, and on Wednesdays you can score it for just 20 bucks.
The best chicken parma in MelbourneAsk around and you’ll find The Birmingham Hotel in Fitzroy is the number-one choice when it comes to a parma. It’s thick (as are the chippies), juicy and coated in Napoli sauce, and topped with smoky ham and golden cheese. Down the road at The Standard, the chicken parma deluxe swaps ham for prosciutto and, together with mozzarella, the chefs add feta (drool). And if you’re a fan of eggplant parma, you’ll love The Standard’s – the eggplant steak is topped with roast capsicum, Napoli sauce, bocconcini and mozzarella. For those in the west, it’s hard to go past The Cheeky Pint; a section of the menu is dedicated to parmas – choose from the classic, the Mexican, which combines spiced Napoli, mozzarella, sour cream and guacamole, or the ‘bbq bacon’ that trades ham for bacon, and it adds barbecue sauce and onion rings. All are served with wedges, FYI. And the Mona Castle in Seddon cures the Monday blues with $23 parma night.
The best chicken parma in PerthThe Globe in Perth’s CBD is home to the juicy, 350g chicken parm (and on Wednesdays it’s a steal at $24). But they don’t stop at the classic – choose from the chicken katsu curry parmigiana, barbecue meatlovers, and the ‘chilli con parmi’, which is topped with crushed corn chips. And each is served with fries and salad. The Guilford Hotel is famous for reimagining pub classics, and reimagine they have. The Guildford parma is 350g of chicken schnitzel, layered Napoli sauce, ham and mozzarella, but with the option to add smoky pulled pork, and we insist that you do (thank us later). The Claremont Hotel serves up a free-range chicken parmigiana that’s topped with tomato sugo, ham, mozzarella and fresh basil. We reckon it pairs pretty well with Claremont Hotel's Sunday aperitivo hour.
The best chicken parma in AdelaideIf you’re in Adelaide's CBD, you’ll want to check out the Prince Albert Hotel. Order the panko-crumbed schnitty and then build it into a parma. And for those of us (read: me) who like pineapple on everything, there’s an option to add ‘parmigiana with pineapple and bacon’. The Earl of Leicester in Parkside is another fan favourite; the menu has an ‘Earl of schnitzel’ section. You can DIY your parma and choose from chicken or beef, next select the size – Baron is 350g or Earl is a huge 600g schnitty. Then it’s time to pick your toppings – there are eight options from the classic and the El Diablo (pancetta, fresh chilli, secret sauce and cheese) to the NYC (pepperoni, fresh chilli, olives, Napoli sauce, parmesan and fior di latte) and the Toro (San José chorizo, roasted capsicum, Napoli sauce and cheese).
