With a stunning collection of bottles and laser-sharp bartending, plus atmosphere to burn, this is a Queensland classic that is sure to raise your spirits.

The Gresham bar and restaurant
Why you goYou’ve got to love a venue that has a back-bar so beautifully stacked with top shelf spirits it requires a ladder with an extension to scale its heights. But this city-centre charmer starts casting a spell on drinkers even before they cross its handsome threshold. There’s something about the traditional sandstone facade of the grand 1881 bank building it calls home that makes it tough to pass by. Inside, classic good looks continue. Double-height plasterwork ceilings, a striking eight-metre long oak bar, velvet drapes and clubby furnishings with just the right patina of age all combine to create an unfussy, nostalgic atmosphere. It’s a vibe that makes it easy to settle in and enjoy the old-school hospitality on offer until 2am every day but Sunday. (And that’s a guaranteed daily 2am finish by the way – not a we’ll-be-open-until-2am-unless-it’s-a-quiet-night-when-we-close-at 11pm kinda promise. Which is nice.)
Why you stayJust like it says in gold letters above the doorway, The Gresham is proudly “a purveyor of fine liquor”. And naturally, it has a crack bar team that knows just how to get the best out of every bottle. They also know exactly how to treat drinkers in a way that makes us want to stick around. Like to watch? Make a play for the coveted seats at the centre of the bar where you’ll be ringside for the action. The venue’s leather-apron clad staff are plentiful. Wherever you end up – and the comfy timber pew inside the front door is a good option if you’re with friends – you’ll be looked after. These days, the back room, with its button-back couches and display cabinetry is open full-time, not just for functions. Wherever you do settle you’ll be presented with menus, a black napkin for your drinks and a tumbler of water. It’s table service only, so there’s no fighting for a place at the bar. The classic rock/alt-rock soundtrack is another stayer – and it's likely to be as varied as your fellow drinkers (yes, and a few of these, no doubt, will date from the ’70s and ’80s, too). And if you find yourself somehow joining in with the la la las during a chorus of Iggy Pop’s “The Passenger”, don’t worry, we’ve all been there.

What drink to order

There’s a clear-cut focus on whisky here, but it’s definitely not to the exclusion of other good things. If whisky is your thing, though, or you’d like it to be, you’ll love the occasional whisky tasting events, and that crazy list – broad and deep enough to include a $13 single-malt from Speyside alongside an ultra-premium 33-year-old Craigellachie, on pour for $195 a shot. In fact, if you’re keen on malts, it’s worth taking time to trawl through the menu before leaving the house. If you just want to get down to business though, and get into the refreshments, the bartenders here also do double-duty as table servers, so it’s easy to ask questions and get advice.

As for the rest of us? Who wouldn’t be happy with a perfectly mixed cocktail – perhaps an icy Martini? They’re not listed, but always available, like all the classics and faves from past menus. Or maybe a nostalgia-inducing Sunny Boy is more your speed. The one you enjoyed as a kid probably didn’t feature Absolut Elyx vodka infused with coconut and butter. But it’s been on the menu here since the place opened in 2013. Or perhaps a glass of wine? It might not be the main attraction here, but you’ll certainly find something classic to enjoy.

What to pair it withA pie to enjoy with your pint, or perhaps to accompany a wee dram? Now that’s civilised bar dining. You can choose a Moroccan lamb number, but it’s harder to turn down the Burgundy and beef pie accessorised with fresh mint and mushy peas. Or you could go for a toastie – perhaps an old-school Reuben with a handful of potato crisps, instead. Speaking of civilised, you can also pop in just for a coffee, from 7am Monday to Friday.
Regular's tipRegulars know there will always be a spot found for them. Things might get busy, but the Gresham team are past-masters at the art of finding a seat for a familiar face.

Don’t leave withoutChatting to staff about the portraits hanging in the front bar and the contents of the display cabinets in the backroom. Learn a little of the history of this wonderful old building. The staff know all the stories.
Make it fancyGot a spare $1,000 to burn? Then there’s a glass of Yamazaki Sherry Cask 2016 whisky here with your name on it. It’s not unpopular either. Apparently they sell one or two every fortnight.
