A snappy little Catalonian-inspired wine bar brimming with savoury snacks and Spanish wines, La Salut is a welcome slice of Barcelona in Sydney’s rowdy Redfern.

Why you goWhen the Love Tilly Group cuts the ribbon on something new, take a ticket and join the queue. This team knows how to make great places to eat and drink – from its genesis with one of the city’s very first great wine bars, Love, Tilly Devine, to its Potts Point sister Dear Sainte Éloise, followed by pasta powerhouse Ragazzi. La Salut, a joint venture with another rising-star hospitality group, The People, was carved into the former sports bar of the Norfolk Hotel (itself a very respectable spot for a schooner and a schnitty) and specialises in fragrant Catalonian-inspired wines and big-flavoured Spanish plates. Its central location means it’s a great place to get a group together on the weekend or just to pop in solo for a vermouth on ice and a handful of pincho-style tapas to wind down from the work week. 
Why you stayLa Salut sits on a main road and you know it – you can hear traffic buzzing by outside and the general bustle of rowdy Redfern. Then there’s the clamour of the central bar that doubles as a food-prep area – bottles being popped open, dishes being stacked and hustle happening every way you look. That’s all in its DNA – La Salut is named after the vibrant, big-personality Barcelona neighbourhood of the same name and you’re getting a taste of its atmosphere here. The décor is also not shy: there’s crazy paving on the floor, bottles of wine and tins of marinated anchovies and tomatoes line the shelves and the plates are emblazoned with bold orange font. It’s all about energy and effervescence, a vibe that makes you want to stay all night.

What drink to order“This is the most exciting time in all of history to be drinking wine from Spain,” reads the opening blurb on La Salut’s hefty wine list, a bold claim but fair. Spain is bursting at the seams with innovative, experimental winemakers making clever, expressive magic with indigenous grapes in three distinct regions (at least according to the groupings chosen here): the Atlantic coast, the warm interior and the Mediterranean to the east. Your only job is to decide where you want to explore –Rias Baixas for albariño, the hills of Rueda for verdejo or Andalusia for a more traditional fortified sherry. And, of course, you should kick things off in Spanish fashion with the true Barcelonian aperitivo: vermouth on ice. The sweet and complex Partida Creus Muz, for instance, combines 51 botanicals and is served with a traditional side of three olives that acts as an appetiser for the rest of your food order.
What to pair it withAn anchovy and tomato with a generous cloud of manchego-cheese custard on a cracker is, well, an absolute cracker. So is a plate of beef tartare served with a confetti shower of herbs, garlic and anchovies and a crown of thin potato crisps. Or to take things right back to basics, order a few simple, salty sheets of Spain’s jamón ham and a robust wedge of sourdough made at the team’s deli and grocer, Fabbrica.

Don’t leave withoutPopping into the shop next door to pick up a bottle of something you couldn’t squeeze in during your meal or the ingredients to construct your own tapas for a homemade revisit of your evening: Spanish anchovies and stuffed olives and Jauma Farm vinegar, perhaps, and a cute canvas tote to get it all home.
Make it fancyMaybe you don’t think Spain when you think sparkling, but maybe you should. Spain’s answer to Champagne is cava, made in the traditional method – that is, bubbled in the bottle, just like your French favourites. The Colet Navazos Extra Brut is a beautiful example and has the very Spanish, and very delicious, twist of a splash of rare palo cortado sherry added after maturation.
