Archie Rose is one of Australia’s top spirit brands and this is where it showcases its wares. Enjoy a drink in the bar or take a deep-dive into the art of gin and whisky tasting or cocktail making.

Why you goThese days, Australia makes more boutique gins, whiskies and vodkas than you can shake a shot glass at, but among the small local producers, Sydney’s Archie Rose, established in 2014, is a standout. As one of the big guns, its core and limited-edition spirits are reliably excellent. The flagship distillery – the first to open in Sydney since the 19th century – and adjoining bar opened to the public in 2015, and over that time the offering has been refined into a slick operation. Expect smart, attentive service, innovative ways to try the entire Archie Rose range and a bunch of young and young-ish local professionals who come here to chat and catch up rather than party.

Why you stayThe fit-out of the bar is on point for the concept. It’s set in a cavernous warehouse that’s part of the Rosebery Cannery complex, which also houses one of the original Three Blue Ducks eateries and Banh Xeo Bar Vietnamese. Bentwood stools line the bar proper, the best spot if you want to milk the amiable bar staff for tips about what to order, while the mezzanine level overlooking the action has the most-comfy seats in the house, the curved booths shaped like distilling barrels. The lighting is low, the stereo plays jazz and a little light disco, and you’ll get the sense you’re in deft hands from the moment you arrive.
What drink to orderObviously, you’re here to drink spirits, and the menu makes no apologies on this front, though there’s also a short list of wine and beer and no one will judge you if that’s what you feel like – the heart wants what the heart wants. A good kick-starter is one of the three mini gin Martini and cheese pairings. Campfire on a Cold Damp Night, for instance, is made with the label’s Bone Dry Gin and comes with an excellent sharp cheddar from the UK’s Fine Cheese Co. Then there are cocktails that range from the sweet, such as the tropical vodka-based Papaya Don’t Preach, to the more complex – the Bitter Sweet Symphony is Archie’s take on a Negroni, made with aromatic Maidenii Kina Quinquina apéritif wine in place of vermouth and Okar Gold liqueur for a little lilt of honey. Of course, you can also have your gin and whisky served the way the lord intended – the former with Fever Tree or Strangelove tonic, the latter neat or on the rocks. And if you really want to roll up your sleeves and get personally acquainted with the Archie Rose range, try a gin, whisky or combination spirit flight that will make sure you leave with a good idea of what you’ll want to add to your bar cart at home.

What to pair it withThe food offering here is more winery-style bites than restaurant snacks, but there are plenty of options worth grazing on in a steady procession throughout your experience. There are several platters to choose from, piled with cheddar, brie, bresaola, salami, pickles and Sonoma sourdough, along with a vegan version that includes cashew cheese, hummus and tahini. Otherwise, the bar does a nice line in spirit-soaking sandwiches such as a dripping Reuben and mushroom and cheese toasties, all served with potato crisps.
Regular’s tipUnlike many venues that charge for water if you ask for anything more upscale than good old Sydney tap, the water here – still and sparkling and served in repurposed Archie Rose bottles – is complimentary. It’s a good idea to keep it coming, not only to keep yourself steady after all those spirits, but also to cleanse your palate if you’re switching things up between gins, ryes and vodkas.
