One of Melbourne’s pioneering breweries brings the funk to Reservoir with a new brewpub that puts wild-fermented beers front and centre to enjoy on site alongside ale-friendly eats.

Why you goSince 2010, La Sirène – self-proclaimed as “Melbourne’s wildest brewery” – has been doing things differently in the beer department. While the majority of big-name beers are brewed in controlled conditions with carefully cultivated yeasts to keep things consistent, La Sirène’s are wild-fermented. That means they’re made with yeasts found in the environment they’re brewed in, meaning they, like wine, really represent where they’re from. At La Sirène’s new north-side brewpub – in an industrial pocket of Reservoir, right near Edwardes Lake – you can try the whole funky catalogue in warm, welcoming surrounds. Peeking above a timber-slatted fence, you’ll spy some stacked-up oak barrels and blue-and-white-striped umbrellas. You’re in the right place. Join hordes of locals inside to have your tastebuds blown, sipping your way through the weird and wacky beers, then get stuck into snacks designed to complement what you’re drinking.
What drink to orderYou’ve got 14 beer taps to choose from – and even more options in cans and bottles. But this bar isn’t just for those who know all about the world of wild-fermented ales. A good place for the unacquainted to start is La Sirène’s Citray Sour. It’s super-refreshing, as sour as its name suggests, and infused with locally grown orange for a citrusy hit. The team also serves it in a gin-spiked summer-perfect Spritz, if a cocktail is more your style. At the other end of the spectrum is the Praline, a chocolate, hazelnut and vanilla stout that’s actually a sour, too, so there’s an acidity that balances out the rich flavours.

What to pair it with Beer is obviously the name of the game for La Sirène, but it’s not the be-all and end-all here. With a full kitchen, the team has created a substantial food menu that’s inspired by the different countries in southern Europe and intended to pair well with the locally born brand’s wild ales. (Your friendly bartender will be more than happy to help you find the perfect match.) Go snacky and shareable with house-made chicken-liver parfait with focaccia or white anchovies on toast; graze all afternoon with a farmhouse board for two, filled with heaps of different deli meats and cheeses, plus dips, pickles, chutneys and sourdough from Brunswick bakery Wild Life; or wrap your hands around a saucy Portuguese-style sandwich starring garlic-marinated Scotch fillet.

Why we love it The perseverance of La Sirène owners Costa and Eva Nikias in the face of adversity is something to celebrate. In late 2022 – 12 years after the beer brand launched – the couple finally realised their dream of opening a taproom inside their Alphington brewery. But not long after, it was forced to close by the council when unforeseen circumstances meant La Sirene had to move. The duo was gutted, and so were fans of their unique, complex beers, who had just been given a dedicated space to enjoy them. So, it was a very good news story the day La Sirène announced it had found a new home in Reservoir, reopening in October 2023.
Who to takeLa Sirène is great for group get-togethers, particularly if your crew likes to drink adventurously. If it’s a warm day, make the most of it by claiming a picnic table in the courtyard, then while away a few hours under one of the umbrellas. Or you can sip your beer where all the brewing magic happens, surrounded by barrels upon barrels in the main indoor bar area. Worth noting: you can book a table for up to 12 people.
Regular’s tipPints and pups – it’s a classic pairing. So, if you’ve got a four-legged friend, they’re more than welcome at La Sirène, so long as they stay outdoors in the courtyard on a leash.
Don’t leave withoutPick up a six-pack or bottle to take home. While this is very much a bar, it’s also a cellar door where you can stock up on whatever you loved drinking during your visit.
