Use homegrown whisky to make this Australian twist on the classic Derby Fizz cocktail.
About the cocktail
The Aussie Derby Fizz gives the classic Derby Fizz an Australian touch, with this cocktail part of the Fizz family. They’re similar to a classic Sour, but with the addition of soda water to add a – would you believe it – fizz to the final flavour. The most well-known fizz is likely the Gin Fizz, which is similar to a Tom Collins, and the Derby Fizz substitutes gin for whiskey. An Aussie Derby Fizz? Well, that showcases Australian whisky as the base spirit, along with triple sec, lemon juice, bitters, egg white and soda water.
The Aussie Derby Fizz is a well-balanced cocktail with just the right amount of sourness, thanks to the addition of lemon juice and triple sec (orange-flavoured liqueur). The egg white adds a lovely texture to the cocktail, while the Australian whisky is the driving force. And the best part is that, thanks to the Australian whisky category being so incredibly varied, you can really tailor the flavour to whatever profile floats your proverbial boat. Whether you like your whisky smoky, spicy, fruity or any other adjective, you’ll find an example of it in Australia.

Ingredients
40mL Australian whisky
20mL triple sec
15mL lemon juice
2 dashes bitters
½ egg white (or 2 tbsp aquafaba)
90mL soda water
Method
Add whisky, triple sec, lemon juice, bitters and egg white to a cocktail shaker
Seal and shake without ice
Now add your ice, shake again, and double-strain into a tall glass
Top with soda water, allowing the cocktail to fizz up to the lip of the glass

As mentioned, there are many different Australian whiskies, so experimentation is your friend here. Try making an Aussie Derby Fizz with a number of different styles of whisky and see which one works best for you. We recommend starting off with something simple, then working your way up to more complex styles. Don’t feel like you need to break the bank with your bottle though – this isn’t the place to use your top-shelf sips because the cocktail’s other ingredients will mask the whisky’s complexity to some extent.
