The Melbourne bar scene is best known for small, quirky watering holes in laneways and basements so The Lounge Bar, large, luxurious and located at one of the city’s premium addresses, can seem like it dropped in from another planet. Or from Manhattan or Tokyo, at least. Attached to Society, the ultra-luxe new restaurant from Chris Lucas of Chin Chin fame, The Lounge strikes a similarly swanky pose, deliberately and unashamedly upmarket, from the quality of its glassware and the charm of its table service to the plushly upholstered banquettes, the dark glitter of its mirrored ceiling and the shimmer of the dark marble wrapping the entire bar. 

Behind that bar you’ll find Orlando Marzo, recipient of the World’s Best Bartender award in 2018 and one of Melbourne’s finest cocktail artists. His pared-back, exquisitely tuned collection of cocktails are a must for anyone wanting to know what “next level” truly means. Even the humble Bloody Mary, the much-loved morning-after saviour, is elevated to art here with a mix that includes celery seed-infused vodka, Marsala, tomato, basil, miso and chilli. The Lounge will do that to a drink, and to a night. It’s all about expensive indulgence – a heightened space in which to impress and splurge, celebrate and congratulate. And don’t we all deserve a little bit of the lush life from time to time?

Why you stayWith its carpeted floors, marble, timber and mirror details, elevator entrance, dramatic light fittings and glimpses of the surrounding cityscape, The Lounge has the air of the lobby bar of a six-star international hotel. It adds a wonderful escapist element that’s particularly enticing if you’ve just schlepped in after a long, annoying day at work. 
What drink to orderSink into one of the armchairs, or slide onto one of the black stools fronting the marble bar and suddenly you’re Bond or Beyoncé, or both, particularly once you’ve ordered The Lounge’s signature drink, the Caviar Martini. Beautifully presented on a silver tray, this is a drink-snack combination pumped up to 11, with small bowls of olives and house-pickled onions and a pastry “pretzel” filled with smoked cream cheese and topped with caviar accompanying the exquisitely chilled Ketel One vodka (infused with nori and butter) and aromatic Lillet Martini. Sure, it’ll set you back $55, but that inner Bond or Beyoncé will agree it’s exactly what you need and deserve, so hang the cost.

What to pair it withThere’s more great snack work, too. Tiny chicken-liver tarts, crab toasts with brown-butter aïoli, freshly shucked oysters with lime and rice-wine vinegar all work brilliantly alongside whatever you choose to drink next, be that a perfectly executed Old Fashioned flavoured with quince or a glass of 2006 Dom Pérignon rosé. It’s the kind of place and pace that’s easy to get used to and you may find yourself reluctant to leave the fantasy, even if you’re only just heading across the lobby to have dinner at Society.

Make it fancyThe Lounge is all about indulgence, right? So if you’re going to do it, then do it right by turning your attention to the Vintage Cocktails section of the menu. This is where Orlando Marzo puts to use the aged bottles of vermouth, spirits and liqueurs he has sourced from all over the globe. The Vintage Negroni, for instance, is made with gin, Campari and vermouth that all date back to the 1970s and will set you back $75. Or perhaps you’d prefer a Martinez made with 1940s Gordon’s gin poured straight from the original bottle for a sweet $155. Out of context (perhaps when you wake the next day) the prices may seem ridiculous, but at the time, in that setting, it feels like the exactly right time and place for a splurge.
