LA’s Chateau Marmont is famous as a hotel to the stars, and its ambitious new Melbourne namesake bar wants to bring a tinge of that Tinsel Town glamour to Crown.

Why you goIf it’s been a hot minute since your last visit to Crown, you’ll notice the Southbank casino precinct has changed a bit. One of its freshest faces? Marmont, a California-inspired indoor-outdoor bar and restaurant making a statement right alongside the Yarra River. It’s by DJ and restaurateur Grant Smillie, co-founder of the nearby Ponyfish Island as well as spots-to-be-seen EP & LP and Grandmaster Recorders in Los Angeles, the energy of which he’s bringing home to Melbourne with Marmont. Vibes are high on the vast, greenery-flanked patio, catching the attention of those wandering by on the Riverwalk. It’s the new place to be in Southbank for spritzing and snacking as the sun goes down. As you move inside, it gets a little moodier, with dim lighting and plush booth seating better suited to those dinners where you lose track of time as late-night DJs usher in a party feel that might have you sticking around later than expected. The backdrop to it all? A colourful, 20-metre-long mural that splashes Hollywood’s night of nights – the Oscars – on the walls.
Why you stayIt’s dinner – and drinks – with a show almost every night of the week. Because of Grant’s DJ roots, he’s made sure that live vinyl sets are part and parcel of the Marmont experience. (Plus, there’s a bookable private room with its own Technics 1200 record player and wall of wax.) What drink to orderMelbourne’s love for the Martini runs deep, and so does Marmont’s. There’s a section in the drinks list dedicated to the pleasurably potent cocktail, with six to choose from. Like it dirty? Try one with Melbourne Gin Company gin and (a whole lot of) olive brine. Prefer it caffeinated? The Espresso Martini gets its coffee hit from Okar mocha liqueur, made by South Australia’s Applewood Distillery. Want a twist? The Larchmont Martini is rum-spiked. But beyond the Martini, the signature cocktails lean into agave-based spirits, including the self-proclaimed Marmont World Famous Skinny Pink Marg: a pretty-in-pink creation that goes easy on the sugar and hard on the El Jimador reposado tequila.

What to eatLet’s call Marmont what it is – a pescatarian’s paradise. If you’re sipping more than you’re snacking, there are a couple of must-order seafood bites: the Abrolhos Islands scallop tostada with green mango and basil, and the loaded mud-crab pretzel with Gruyère cheese and Old Bay seasoning. Both are deliciously messy dishes to eat. Charry Skull Island prawns, meanwhile, spiced up with Calabrian-chilli butter, are on most tables. And here’s one last food-related tip: don’t discount dessert. Headlining the sweets selection is a supersized chocolate-chip cookie, served warm with Armagnac ice-cream.
Make it fancyDespite its prime riverside position, you don’t have to splash out on an evening at Marmont. But if the occasion lends itself to pushing the boat out (anniversary, milestone birthday, schmoozing work colleagues) the wine list is packed with premium options. But no section more so than the sparkling, which includes a $1600 bottle of Armand de Brignac’s Ace of Spades Brut Gold Champagne and a $2500 bottle of Louis Roederer.
