On-point cocktails, some of the city’s finest (house-made!) cured meats and no shortage of clubby swagger add up to a welcome addition to Perth’s wine bar heartlands.

Why you go The crew at Sesh Mafia Group like to party. Or at least that’s the sense one gets after spending the night at Subiaco’s modern Asian eatery Shui or CBD izakaya Papi Katsu: two spirited drinking and eating establishments that blur the lines between bar, restaurant and nightclub. (Of course, Sesh Mafia’s reputation for potent cocktails might have something to do with that blurriness, too.) The latest addition to the group’s stable is Margot’s, a slickly designed den bringing together dark timber, lustrous finishes and a drinks and snacks menu inspired by Eastern Europe. Yes, it’s an unexpected combination. And yes, it works.
Why you stayYou’ll hear Margot’s before you see it. Then again, perhaps blasting the top of William Street – Perth’s wine-bar ground zero – with bass-heavy house is a novel way to stand out from the crowd. While zinc bistro tables on the sidewalk chime with wine-bar thinking, sprawling booths in the main room feel like a remnant from the space’s past life as a nightclub. Move through to the back room and discover a communal tasting table and a cabinet of cured meats showing off house-made sausages and smallgoods. Despite the bar’s multiple personalities, all the staff are on the same page when it comes to winning over guests. The welcome is warm, the details have been sweated (love those etched cocktail coupes), plus their drinks know-how is sound.

What drinks to orderConsidering that career bartenders make up a sizeable chunk of the Sesh Mafia ranks, it’s no surprise that Margot’s mixed drinks really are excellent. Although the make-up of many a house concoction will thrill bar geeks – the Alaska, a Martini variant, unifies yellow Chartreuse and gin in holy matrimony; the cultish bitter Italian liqueur Fernet makes an unexpected cameo in the house Manhattan – easier-going libations such as tequila sodas and Americano Spritzes ensure everyone will enjoy themselves here. The far-reaching wine list features a strong West Australian flavour with local vignerons well-represented among the glass pours.
What to eatWhile its neighbouring wine bars go big on French, Italian and other Mediterranean cuisines, Margot’s looks to the continent’s more easterly nations for inspiration. The result is a Baltic-leaning menu starring fillets of curried trout on toast, smoked kranskies made with silver cobbler fish, garlicky Polish sausage, discs of the air-dried beef known as bresaola, and other benchmark-quality smallgoods and sausages. Although your GP wouldn’t want you to make a habit of eating this much cured meat and veg regularly, they’d probably understand if it was a sometimes-treat to go with the occasional freezer-cold Martini. Probably.

Who to take“Someone open to stopping by one of the nearby wine bars” is the correct answer to the above question. And why not? Margot’s proximity to Wines of While and Vincent combined with its strong cocktail game make it an ideal counterpart to the former’s grape-based pleasures. Of course, Margot’s has more than enough going for it to recommend the bar as a standalone destination. For anyone who likes their drinks, small plates and music punchy, this plucky newcomer is making all the right moves. Just follow the bass.
