About the cocktail

It’s all in the name, right? And even if you haven’t heard of the Suntoucher cocktail, we’ve no doubt you won’t be forgetting it any time soon. Think of it as a bit of play on the Prohibition-era Bee's Knees cocktail, which is made with gin, honey syrup and lemon juice. The Suntoucher adds passionfruit liqueur to bring tropical, fruity vibes to the forefront, resulting in a summer-ready cocktail that is sure to please.

The Suntoucher is definitely a cocktail for anyone with a slightly sweeter tooth, thanks to the honey syrup and passionfruit. That said, it’s by no means the sweetest thing you’ll ever taste, and even those who swear they ‘don't do sweet’ will still appreciate a Suntoucher on a sunny day.

Ingredients

  • 25mL lemon juice
  • 15mL honey syrup
  • 15mL passionfruit liqueur
  • 45mL gin
  • Garnish: mint sprig, orange slice and cinnamon powder

Method

  1. Add lemon juice, honey syrup, passionfruit liqueur and gin to a cocktail shaker with ice 
  2. Shake, and then strain into a tumbler
  3. Fill with ice, then garnish with mint, orange and a dusting of cinnamon powder on top

If you do find the Suntoucher is a little too concentrated for your palate, you can easily make a Suntoucher 'Collins' by adding soda water and serving it in a highball glass. The Collins family of cocktails, pioneered by the Tom Collins, makes use of a century-old recipe that’s simple and well balanced. All Collins cocktails are served in tall glasses and made using the same formula of spirit, sweet, sour and soda. In the case of a Suntoucher, these elements would be covered by gin, honey syrup, lemon juice and the addition of soda water. It’s a nice way to dilute the cocktail while adding a refreshing element of effervescence.
