Slide over Aperol Spritzes, there’s a new tipple in town. From Matt Stirling (the cocktail genius behind Melbourne’s Caretaker’s Cottage, which recently earned a spot in The World's Top 100 Bars list) comes this delicious Dusty Springfield recipe.
Truth be told, the Dusty Springfield is more of an evolution of a classic Aperol Spritz, leveraging the tropical tastes of new-kid-on-the-block, fruity beer. The addition of amaretto is new too, adding a warmth and nuttiness missing from the original drink. It's a whole new way to look at the enduring summer essential.
Buoyed by the light and crispy charms of Sungazer Mango fruity beer, this cocktail has aperitivo hour written all over it. “Simple, bold and fruit forward, this is perfect for your spritz occasions,” Matt says. Afternoon prosciutto and burrata party it is!
Replacing the flavourless (yeah, we said it) soda of the OG spritz, fruity beer injects extra tang and refreshment. “Sungazer Mango is the perfect lengthener,” he explains. “It lifts and invigorates the nostalgic notes of almond and marzipan coming from the amaretto."
Aperol, of course, fills the mid-palate with those signature notes of orange and rhubarb – a ‘spritz staple’ according to Matt – while the mint and grapefruit garnish “bring vigour and freshness to the nose from the first sip.”
