The Courtside is a super refreshing cocktail

Made for tennis, but also for summer.

About the cocktail

Wimbledon brings a few things to mind. And before you can say Pimm’s, or rain, there’s another spectator worth knowing: The Courtside. No, not the spot reserved for all the famous people who pour into the arenas, but the cocktail. In fact, like those first-class few, the Courtside cocktail is another premier club member of Wimbledon’s elite. 

Like the good English rose this cocktail is, it unites many of the British classics. The key liquor here is gin, London dry gin to be specific. Not passing by the apple juice or elderflower liqueur either for that English countryside perfume. Or what we imagine it to be like.

Using some of the 1.5 million strawberries served throughout the tournament, there’s just a small portion in the Courtside. The higher ratio of raspberries brings a balancing tartness, while taking a chic side-step from being ‘too’ Wimbledon. That’s what the strawberries and cream are for.

Fortunately, while this drink loves tennis, it doesn’t need the game. Less fussy than its celebrity and grandstand company, as long as it’s been muddled and served chilled, you can serve this up on a picnic rug in any garden or even in the back row. How ace.

Ingredients

  • 1 fresh strawberry 
  • 3 fresh raspberries (plus extra for garnish) 
  • 45mL gin
  • 15mL elderflower liqueur
  • 45mL apple juice
  • 15mL fresh lime juice
  • 10mL sugar syrup
  • 90mL soda water
  • Glass: highball
  • Garnish: mint and skewered raspberries

Method

  1. Muddle strawberry and raspberries in a cocktail shaker
  2. Add gin, elderflower liqueur, apple juice, lime juice, sugar syrup and ice
  3. Secure shaker and shake vigorously until cold
  4. Strain into a chilled highball glass
  5. Top up with soda water and ice
  6. Garnish with mint and skewered raspberries

Dan’s top tips

London dry gin is customary, but it’s certainly not essential. Go for your own gin preference here, or perhaps even swap the spirit for vodka. Many do already.

While we’re in the mood for changing things up, it’s worth noting these ingredients should be used as a guide – not a set of game rules (despite what the sport may argue). Lime has a bitter zing, but lemon would also cut through any lingering sweetness in its own style. If you want to serve up more British flavour, an English sparkling wine could be used in place of soda.

Have a play around with your muddle, too. If they’re in season, try adding blueberries or blackberries to the mix, or try working in other herbs like basil.
