Ingredients

  • 1 kg live mussels
  • 4 French shallots, finely diced
  • 3 cloves of garlic, finely sliced
  • 4 tbsp lemon olive oil
  • 1 cup dry white wine
  • 1 pack of linguini
  • 2 tbsp each of parsley, thyme and oregano, chopped
  • 1 cup of parsley, chopped
  • Ground pepper to taste

Method

  1. debeard the mussels in a bowl of cold water.
  2. Bring a large pot of salted water to a rapid boil, add the linguini and cook until al dente.
  3. Strain, then toss with a little olive oil and the parsley, thyme and oregano. Cover and set aside.
  4. Pour the lemon olive oil into a large pot and heat on low, adding the shallots and garlic. Cook until soft and translucent.
  5. Add the wine and increase heat. Boil until reduced by half.
  6. Add the mussels and pepper, then stir and cover with lid. After 1 minute give the pot a light shake, then cook for a further minute before adding extra parsley.
  7. Place a generous twist of linguini in 4 bowls, divide the mussels equally between them and spoon over the broth.
