Ingredients

  • 2 smoked chicken breast fillets
  • Radicchio leaves
  • Micro herbs
  • 4 quail eggs
  • Parmesan cheese, grated
  • 1 baguette thinly sliced
  • 4 tbsp lime mayonnaise
  • White balsamic vinegar

Method

  1. Soft boil the quail eggs by placing the eggs in cold water, on high heat. Bring the water to the boil and remove the eggs immediately. Plunge into cold water to stop the cooking process.
  2. Arrange the bread on a baking tray, cover each slice with grated Parmesan and place in an 180°C oven for 8 to 10 minutes, or until the cheese is golden and bubbling.
  3. Wash and spin the radicchio leaves, stack them on the serving plates.
  4. Thinly slice the smoked chicken, fan it out on top of the leaves, and place a dollop mayonnaise on ready for the quail's egg.
  5. Slice the top of the egg off, sit the large part into the mayonnaise and place the lid next to it.
  6. Arrange the micro rocket and drizzle the whole dish with a little white balsamic vinegar.
  7. Serve with the parmesan toasts on the side.
