Fresh raspberries with sherry cream and raspberry sorbet

Ingredients

  • 500g frozen raspberries
  • 2 punnets fresh raspberries
  • 5 tbsp icing sugar
  • Boiling water
  • 2 cups cream
  • 1 vanilla pod
  • 1 tbsp sweet Sherry
  • Mint

Method

  1. Make a quick sorbet by processing the frozen raspberries. While the motor is running add 3 tbsp icing sugar to a little boiling water to form a paste, and then pour into the processor while still hot. The mix should look like soft raspberry ice. Place in the freezer until serving time.
  2. Make the Sherry cream by whipping the cream with the vanilla seeds, remaining icing sugar and Sherry.
  3. To serve, simply wash and dry 2 punnets of fresh raspberries, spoon a little pile onto each plate and add a round scoop of each, raspberry sorbet and Sherry cream.
  4. Sprinkle some shredded mint over the plate and enjoy.
