Salt and Pepper Squid

Four as a starter

Ingredients

  • 2 cleaned squid tubes
  • 3 tbsp rice flour
  • 3 tbsp coconut cream, powdered
  • 1 tbsp salt
  • 1 ½ tbsp Szechuan pepper
  • Sunflower oil for frying

Method

  1. Lay the squid tubes flat on a chopping board and place a long knife inside. Cut down one side of each tube and then unfold it flat.
  2. Rinse tubes under cold water and pat dry with paper towel.
  3. Score one of the tubes in a diamond pattern and then slice into squares. Cut the other tube into strips.
  4. Mix all the dry ingredients in a bowl. Toss the squid pieces 1 at a time into the flour mix and then set aside.
  5. Place a heavy based pan on high heat and add around 6cm of oil. Once the oil is hot, fry the squid pieces for about 1 minute.
  6. Remove, drain and serve immediately with a wedge of lime.
