BBQ Prawns With A Prosciutto Scarf

Ingredients

  • 1kg green prawns, shelled, tails on
  • 150g prosciutto
  • 6 lime cheeks

Method

  1. Heat a BBQ plate to high.
  2. Cut the prosciutto length-ways into long, 3cm wide strips, and wrap one piece around each prawn. Repeat until the strips of prosciutto and prawns are exhausted.
  3. Place the lime cheeks, flat side down onto the oiled BBQ plate. Cook for 2-3 minutes until charred, then rub the whole plate with the limes and remove to be used at serving time.
  4. the prawns onto the BBQ plate and cook for around 40 seconds each side.
  5. Eat them straight off the BBQ if you are alfresco, or serve them inside on a sizzle plate for effect. Squeeze with the charred limes and cover with lashings of lime aioli.
