Ingredients

  • 4 beetroot
  • 1 carrot
  • 1 leek, white part only, sliced
  • 1 tbsp lemon juice
  • ½ tsp allspice
  • ½ tsp nutmeg

Method

  1. Wash, peel and roughly chop the beetroot, carrot and leek, add them to a large saucepan and add the spices, lemon juice, bay leaves and stock.
  2. Bring to the boil, reduce the heat to low and simmer, covered, for 1 hour. Allow to cool.
  3. Blend with a stick mixer and season well with salt and pepper. Return to saucepan and gently heat through if serving hot, or refrigerate if serving cold.
  4. Place in bowls and garnish with a dollop sour cream and the baby beetroot leaves.
