Italian - Panettone

Ingredients

  • 1 tablespoon dried yeast
  • 1 cup lukewarm water
  • 4 tablespoons caster sugar
  • 2 eggs
  • ½ cup plain yoghurt
  • 1 tablespoon grated lemon zest
  • ¼ teaspoon salt
  • 500g plain flour
  • 1/3cup currants
  • 1 vanilla pod – seeds only
  • 1 tbsp honey
  • 1/3 cup sultanas
  • 1/3 cup of cranberries

Method

  1. In a medium bowl, combine yeast, water and caster sugar. Cover and let stand 10 minutes. Add eggs, yoghurt, vanilla, lemon zest and salt. Mix well. Stir in flour a little at a time until dough forms a ball.
  2. Turn out on to a lightly floured surface and knead for 5 minutes, until dough is soft and pliable but not sticky.
  3. Place dough in a large, lightly greased bowl, cover with a clean cloth and let rise in a warm place until doubled in size, around 1 hour.
  4. Lightly grease a round 20cm cake tin. In a small bowl, toss dried fruit with honey. Knock back the dough, transfer to floured surface and knead in the fruit. Form dough into a ball, place in tin, and cover loosely with the cloth and let rise 30 minutes.
  5. Bake at 180°C for 45 minutes, or until loaf is golden brown and a skewer inserted in the centre comes out clean.
