Goat Cheese Salad

Ingredients
- 400g soft goat cheese
- 12 slices of bresaola
- 20 lemon capers
- ½ red onion, finely diced
- 1½ tbsp olive oil
- 3 tbsp verjuice
- 12 mint leaves, torn
- 200g rocket or salad greens
- 1 tsp lemon zest
Method
- Wash and dress the greens with the oil and verjuice.
- Arrange greens on a plater to share or serve individually.
- There should be some dressing remaining in the bowl.
- Top the greens with the bresaola, capers, cheese and diced onion.
- Spoon the remaining dressing on top and sprinkle on the lemon zest.
- Serve immediately.
