Food and Wine Matching - Goat Cheese Salad

Ingredients

  • 400g soft goat cheese
  • 12 slices of bresaola
  • 20 lemon capers
  • ½ red onion, finely diced
  • 1½ tbsp olive oil
  • 3 tbsp verjuice
  • 12 mint leaves, torn
  • 200g rocket or salad greens
  • 1 tsp lemon zest

Method

  1. Wash and dress the greens with the oil and verjuice.
  2. Arrange on a plater to share or serve individually. There should be a little dressing remaining in the bowl.
  3. Top the greens with the bresaola, capers, cheese and diced onion.
  4. Spoon the remaining dressing on top and sprinkle on the lemon zest.
  5. Serve immediately.
