Food and Wine Matching - Crumbed Blue Eye

Ingredients

  • 800g thick Blue Eye, cut into squares
  • 3 slices day-old bread
  • ½ tsp of both sesame seeds and nigella seeds
  • 2 eggs
  • A dash of milk
  • 3 tbsp flour
  • 2 large Pontiac potatoes
  • 1 sweet potato
  • 1 piece of pumpkin (same size as sweet potato)
  • Salt and pepper
  • Olive oil for frying
  • Lemon aioli

Method

  1. In a food processor place three slices of day-old bread roughly chopped, and pulse until the crumbs are fine, then add the seeds.
  2. In three separate bowls place the crumbs, the flour with salt and pepper, and the whisked eggs with a dash of milk and salt and pepper.
  3. Dust each piece of fish in the flour, coat in the egg wash and follow with the bread crumbs, pressing down to ensure a consistent coverage.
  4. Peel the vegetables and cut into chunky strips, all around the same size.
  5. Coat them in a little olive oil, place on a baking tray, then into a hot oven (200°C) for 15 to 20 minutes until tender and golden brown.
  6. Shallow fry the fish, turning often so that all the sides are browned.
  7. Put the fish and vegetables onto paper towel to absorb any excess oil.
  8. Season with a little sea salt and serve with a generous dollop of aioli.
