Ingredients

  • 1 large sweet potato, peeled, thinly sliced
  • 6 large royal blue potatoes, peeled, thinly sliced
  • 100g butter, melted
  • Salt and pepper
  • 4 bacon rashers, thinly sliced
  • ½ cup of cream

Method

  1. Preheat oven to 210 degrees. Brush a round 20" springform pan with melted butter to lightly grease.
  2. Place the potato slices in a large bowl. Add the melted butter and salt and pepper, then gently toss until potato slices are well coated. Microwave the potato slices for 3 min on high to soften.
  3. Place a layer of potato slices evenly over the base of the pan, continue layering with the remaining potato slices, with a layer of sweet potato and bacon in the middle. Finish with a sprinkle of bacon on top.
  4. Bake in oven, pressing the potato down with the back of a large spoon a couple of times during cooking, for 1 hour or until tender and golden. With 15 minutes to go, pour on the cream, smear it evenly over the top and return to the oven.
  5. Remove from oven and set aside for 15 minutes to cool slightly. Turn onto a serving plate. Cut into wedges and serve hot or cold as the main event or a side dish.
