Food and Wine Matching -Chilli crisps with Loose Crab Meat and Lemon Aioli

Ingredients

  • 250g crab meat
  • 2 purple sweet potatoes
  • Vegetable oil for deep frying
  • 4 tbsp aioli
  • 1 tsp lemon zest
  • 2 tsp lemon juice
  • 1 finely sliced chilli
  • 1 halved chilli for rubbing
  • Salt and pepper to taste

Method

  1. Using a mandolin slicer, slice the sweet potato as thinly as possible.
  2. Deep fry the potato until crisp and golden, drain on paper towel, season with salt and rub each slice with the chilli.
  3. In a bowl, mix the crab meat, aioli, chilli, lemon zest and juice.
  4. Place a spoonful on each crisp, season with salt and pepper and top with a little spring onion and extra chilli if desired. Serve.
