Cajun Chicken - Slow Cooked on the Bone

Ingredients

  • 8 chicken thighs, bone in
  • 2 tbsp vegetable oil
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sweet paprika
  • ¼ tsp cayenne pepper
  • 1 tsp ground black pepper
  • ½ tsp sumac powder
  • Rice to serve
  • Sunflower seeds, roasted and salted to garnish

Method

  1. Use a knife to score the chicken, skin-side up. This helps the seasoning penetrate deeply into the chicken
  2. Combine the oil, herbs and spices in a large bowl. Add chicken, then use your hands to rub the coating all over each piece.
  3. Place the chicken into an oven dish with a tight-fitting lid. Cook in an oven at 120ÂșC for 2 hours, basting often with the juices that form. Remove the lid and cook for a further 20 minutes at 180°C to ensure the skin is crispy.
  4. Serve with rice and sunflower seeds.
