Brandy - Plum Pudding with Brandy Custard

Ingredients

  • 250g raisins
  • 250g currants
  • 250g sultanas
  • 100g dried cranberries
  • 100g chopped dates
  • 1 ½ cups Brandy
  • Melted butter, to grease
  • 250g butter, at room temperature
  • 200g (1 cup) firmly-packed brown sugar
  • 4 eggs
  • 1 cup fresh breadcrumbs
  • 1 cup self-raising flour
  • 1 cup plain flour
  • 1 tsp bicarb soda
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1 tsp grated nutmeg
  • 1 tsp ground ginger
  • Warmed custard, to serve

Method

  1. Combine all dried fruit and Brandy in a bowl. Cover and leave to macerate overnight.
  2. Brush a 2L (8-cup) capacity pudding basin with melted butter to grease. Line the base with non-stick baking paper.
  3. In a large saucepan melt the butter; add the fruit, spice and sugar. Mix all ingredients on medium heat until combined. Remove from heat and add eggs, one at a time, beating well after each addition. Stir in breadcrumbs, sifted flours and bicarb. Stir until combined and spoon into basin.
  4. Fill the pudding basin with the mixture and cover. If the lid is not tight fitting, use some kitchen twine to secure into place.
  5. Lower the basin into a saucepan of simmering water. Add enough boiling water to reach two-thirds of the way up the basin. Cover and simmer 3 hours or until a skewer inserted in the centre of the pudding comes out clean.
  6. Remove basin from pan. Set aside for 5 minutes.
  7. Brandy Custard Ingredients

    • 2 cups milk
    • 1/3 vanilla bean or ½ teaspoon vanilla essence
    • 6 egg yolks
    • 150g caster sugar
    • 3 tablespoons Brandy

    Method

    1. Warm milk with vanilla in a medium saucepan. Beat egg yolks with sugar until light and fluffy. Pour hot milk onto egg mix, whisking quickly to stop the eggs from scrambling.
    2. Return custard to pan and on a medium heat, stir continuously until the mixture coats the back of the spoon. It only takes a few minutes.
    3. Strain custard into a mixing bowl, add Brandy and whisk for a few seconds. Serve with the pudding.
