Blackened Baby back Pork Ribs with Strawberry Chilli Glaze

Ingredients

  • 3 rows of baby back pork ribs
  • Salt and pepper to taste
  • 500g fresh strawberries, washed, hulled and halved
  • 2 tbsp water
  • ½ cup sugar
  • 5 fresh chillies, seeds removed, finely sliced
  • 2 tbsp harissa paste

Method

  1. Place the strawberries and water in a medium pot and cook over a hot plate on high heat for 5 minutes until the fruit is soft. Add the sugar, chilli and harissa, reduce heat to low and cook for 30 minutes. Let cool.
  2. Season the ribs with a little salt and pepper then rub them with half the glaze, then refrigerate overnight.
  3. To cook, place the ribs in an oven dish and roast them for 30 to 40 minutes in an oven at 210ÂșC. Remove from the oven and brush with the remaining glaze.
  4. Rest for five minutes then serve.
