Beetroot sashimi, scattered with soft goat cheese and shredded mint

Food and Wine Matching - Beetroot Sashimi

Serves

Two as a starter

Ingredients

  • 1 large fresh beetroot, peeled and thinly sliced
  • 2 tbsp olive oil
  • 3 tbsp white balsamic
  • Salt and pepper to taste
  • 100g soft goat cheese of your choice
  • 8 mint leaves

Method

  1. Place the salt and pepper, beetroot, olive oil and white balsamic in a large bowl and toss, coating each beetroot slice evenly, then set aside for 20 minutes.
  2. Lay the beetroot slices out on a flat platter. Top with pinches of goat cheese rolled into balls and coated in a little black pepper.
  3. Garnish with mint.
