BBQ lamb skewers glazed with mint and garlic

Food and Wine Matching - BBQ Lamb Skewers

Ingredients

  • 1kg diced lamb
  • 1 whole garlic bulb
  • ½ cup thick mint sauce

Method

  1. Thread lamb onto metal skewers and then place them in a ceramic dish.
  2. Cut the whole garlic bulb through the middle and rub it all over the lamb. Then brush with the mint sauce, cover and refrigerate for at least 1 hour.
  3. Preheat a barbecue plate on high. Brush the plate with a little olive oil and rub garlic around in the oil. Cook skewers, basting with the mint sauce, for around 3 minutes each side, or until cooked through.
